Pecan Apple Pie Pancakes

Reminded me of pecan pie...YUM!

Makes about 20 pancakes

1 1/2 cups Hodgson Mill Buckwheat Pancake Mix
1 C milk
1 egg
2 T oil
Two individual servings Motts Natural Applesauce
3 t cinnamon
2 t sugar

Preheat griddle to about 350-375 degrees.  Mix all of the above together.  Batter should be thick but pourable.  Add more milk if necessary to get desired batter consistency.  Let batter stand for 5 minutes.  Grease griddle and pour batter.  Sprinkle with chopped pecan pieces.  Cook until edges dry and middle starts to bubble.  Flip and cook on other side until golden brown.  Serve with maple syrup.
